Job Description

Overview

Rockit Ranch Productions, a Chicago-based Hospitality & Entertainment Company with six Chicago locations, is looking for a General Manager for the popular River North cocktail bar and kitchen, Bottlefork. This dynamic property offers guests delicious brunch, lunch & dinner selections seven days a week. 
 
The ideal candidate will have a strong background in restaurant management. We desire a personable candidate with professional experience managing a 3-5 person operations and culinary team, food and alcohol sales, hosting VIPs and driving sales in all areas. 
 
The General Manager runs the day-to-day operations our organization and business. An individual in this position should be able to lead their venue’s team to success by implementing all policies, procedures and business plans, while communicating efficiently and effectively to all levels of employees.

  • Sanitation laws and regulations
  • Safety laws and regulations
  • Managing budgets and P&L statements
  • Chicago restaurant and culinary scene
 
 

Skills & Responsibilities 

 
 
  • Ensures all company policies and procedures are followed to produce a financially sound business atmosphere.
  • Adheres to and is held accountable for the store specific budget. Line items to include:
    • Daily Sales – including event sales
    • Labor Cost
    • Food Cost
    • LBW Cost
    • Repair and Maintenance
  • Is held accountable and must be able to answer to monthly P & L Statement.
  • Responsible for the development of entire management team.
  • Provides direction regarding operational and procedural issues.
  • Provide direction to hourly employees regarding operational and procedural issues.
  • Hiring guidelines and hiring profiles are in place for all departments.
  • Ensures an accurate and up to date plan of restaurant staffing needs is complete.
  • Ensures that all employees are certified in both Sanitation and/or BASSET Training where required by law.
  • Ensures that proper documentation is filled out for all employee incidents.
  • Ensures that all Management Checklists are completed for every shift to ensure that all policies and procedures are being followed in the day to day operations of the restaurant.
  • Ensure a safe working and guest environment to reduce the risk of injury and accidents. Accident reports are filled out and transmitted in a timely manner.
  • Ensures that all shifts are managed to include; daily decision making, proper scheduling, planning while upholding standards, product quality and cleanliness.
  • Full working knowledge of Micros and Open table (where applicable).
  • Communicates meeting notes from GM meeting to the management team.
  • Ensures that all Marketing initiatives are fulfilled in accordance to Marketing Department directives.
  • Responsible for all invoicing to be properly and timely imputed into system.
 
 

Position Requirements

 
 
  • At least 5 years of experience in a management position for a high volume, fast paced restaurant; experience working in management for a lounge/club not required, but desirable
  • Complete knowledge and understanding of local and state sanitation & safety laws and regulations
  • Strong awareness of Chicago’s restaurant and hospitality scene
  • Must have experience managing a team and able to properly communicate with and motivate staff
  • Ability to balance venue operations responsibilities as well as administrative and accounting tasks
  • Have strong attention to detail and must be very organized
  • Ability to work late night and weekend hours
  • Possess a strong work ethic, be honest, trustworthy and respectful towards peers, employees and guests
