Job Description
Summary

Prepares food in accordance with applicable federal, state, and corporate standards, guidelines, and regulations with established policies and procedures.
  • Executes food preparation according to policy, procedure, and specifications.
  • Ensure compliance with airline and fresh meal specifications, personal hygiene, and food handling procedures.
  • Helps maintain workstation and overall kitchen cleanliness. Assists in departmental scheduling and control of hours and food costs.
  • Helps to control food costs by following proper food rotation procedures (FIFO).
  • Knowledge of safety procedures, including safe temperatures at which ingredients must be kept and to which food must be prepared to avoid foodborne illness.
  • Ability to work as part of a team, collaborating on complex dishes.
  • Calm demeanor to work in a high-stress, fast-paced environment
  • Comprehension and organization to follow direct orders and recipes and prepare dishes according to airline standards.
  • Ensure HACCP and General Manufacturing practices are followed.
  • Ensure safety awareness is implemented in all related departments.
  • Other duties as assigned.

Knowledge, Skills & Abilities
  • Minimum of 2 years as a Lead Cook in a high-volume cooking institution/airline catering or food catering industry.
  • Manual dexterity and hand-eye coordination to handle tools, such as knife techniques for chopping, slicing, cutting, and dicing.
  • Ability to stand in one place for hours at a time, handle the heat, and work shifts.
  • Ability to read, speak, and write English.
 
Experience/Education
  • Five (5) years of cooking experience preferred.
  • Experience with multi-airline international customers preferred.
  • Working knowledge of HACCP, USDA, and FDA compliance.
  • Minimum of two (2) years as a Lead Cook in a high-volume cooking institution/airline catering or food catering industry.

Supervisory Responsibility
This position has no supervisory responsibilities.

Position Type/Expected Hours of Work
This is a full-time, non-exempt position.  Days and hours of work may vary depending on the business.  Must be willing to work any shift or days off as leadership assigns.
